The Oyster Wheel turns again – and this time it takes us to the heart of Southern Brittany, where May’s oysters from Maison Cadoret are ready to take over the plates: Perle Noire.

An oyster with terroir and history

Perle Noire is cultivated in Riec-sur-Bélon – a place so beautiful and iconic you almost expect to run into Asterix and Obelix between the tidal channels. Here, where fresh water from the Bèlon River meets the salty Atlantic, a unique merroir is created – the ocean’s counterpart to terroir – giving Perle Noire its distinctive flavor with notes of hazelnut, cucumber, and umami.

Maison Cadoret has been farming oysters for five generations and controls the entire process: from genetic origin to handling and maturation. The oysters spend their early life in the nutrient-rich waters of Northern Brittany, building strength and meatiness before being transferred to the Bèlon River to develop their fine, mineral finish.

Body, character, and careful craftsmanship

Perle Noire is grown on the riverbed and remains constantly submerged – a key factor for both taste and texture. They live side by side with the famous flat Bélon oysters, but in separate parks, as they require different care. The result is an oyster with a full body, a delicate snap, and a long, elegant finish.

Sustainability in practice

Maison Cadoret actively works to protect the fragile coastal ecosystem. They use electric boats, promote regenerative ocean farming, and take responsibility in the fight against pollution from industrial agriculture – a real necessity in agriculture-heavy Brittany. Their work is a clear example of how oyster farming can support both nature and quality.
