The Oyster Wheel is turning again!

And this time, we’re heading to Brittany – all the way out where the Atlantic breaks loose and the tides move mountains. Here lies the Archipel de Lilia – a small, rugged archipelago of dark rock, lava hues, and a light that changes with every pull of the sea.

And right in the middle of it all stand Adrien Legris and his brothers – third-generation oyster farmers – wading knee-deep with their hands full of something truly special: NAKR.

Yes, that’s really its name. NAKR – which in Danish means mother-of-pearl. A name that fits perfectly, because this oyster shines like a jewel – both in color and in taste.

Adrien has worked on this project for years, inspired by the world of wine. He has divided his waters into small parcels, each with its own méroir – a unique interplay of light, tide, current, and minerals. Think of it like Burgundy’s single vineyards, just with saltwater instead of chalk.


An oyster with depth

The result? An oyster with rare depth, minerality, and complexity. It’s given plenty of space – only three to five oysters per cubic meter – allowing it to grow slowly, strong, and resilient.
