Squid with Character: A Visit to Moy Seafood in Cádiz

We recently travelled to southern Spain to visit Moy Seafood – a long-time partner of ours and a company that has dedicated itself 100% to one thing only: eight-armed octopus.
At Moy Seafood, quality and low-impact fishing are top priorities. The octopuses are caught off the coast of West Africa, where the Sahara stretches into the ocean, creating a sandy seabed with no hiding places. This unique environment produces especially fast octopuses with short, powerful arms and an exceptional texture.
They are caught in small boats using pots and traps – a traditional and gentle method. The octopuses are then cleaned using a Japanese technique: the innards are removed, but they are not rinsed or packed in ice. Instead, they’re frozen immediately, preserving the tenderness of the meat. Before shipping, they are gently thawed, washed by hand, and sorted by size.

Top Quality, Ready to Go
While a large part of their production goes to Japan, Moy Seafood also supplies Europe – and we’re proud to be among their partners. In addition to whole raw octopus, they also offer pre-cooked arms, sorted by precise weight ranges. This allows restaurants to plan portions and cooking times with pinpoint accuracy – and without waste.
The quality is top-tier – for both raw and pre-cooked options. We especially want to highlight the cooked arms as a gamechanger: ready to use, packed with flavour, and perfect for the grill or summer salads.
And yes – it’s actually very easy to work with: they arrive thawed and ready to prepare.
Pulpo isn’t just delicious – it’s also sustainable, low-impact, and fast-growing. A true summer favourite we can’t get enough of here at the Kaj.
