Traffic issues
January has kicked off with frost, snow, and proper cold—and honestly, it’s damn nice to be reminded that winter can still bite now and then!! Unfortunately, it also brings traffic issues, especially up north, where a lot of our fish comes from during this period.
So please bear with us a little when you’re waiting for your delivery. Unlike many other suppliers, we depend on fish arriving daily, and when transport is delayed, so are we. Add to that the general slowdown on the roads when the sky starts throwing snow at us, and things can quickly end up running late. We apologise in advance—but there’s honestly not much we can do about it.
Keep a little in the freezer
When it comes to planning the menu, it’s a good idea to stay a step ahead. Cold winter storms can keep boats in harbour for longer periods, so having a bit of fish in the freezer can be a very smart move. Buy fish when we have plenty of it, and don’t expect everything to be available every single day.
This is the world’s last truly wild raw ingredient we’re working with—and it’s real people heading out to sea to catch it. Every now and then, it simply isn’t possible.
