There’s something quite special about seaweed in the Christmas month. It stands there crisp, upright, and ice-cold – a bit like a fir branch, just with umami. This December, we’ve continued our tradition of speaking with the good people from Dansk Tang to hear what’s actually happening out there in the underwater forest. Spoiler: It’s more than you’d think.

Gracilaria – the Christmas Seaweed of the Year

If you’re only using one seaweed in December, go with gracilaria. It absorbs flavor like a sponge, works brilliantly in red cabbage salad, and is still standing impressively well after a warm autumn where the water cooled down slowly. The result: plenty of fresh gracilaria, right now.

Seaweed Farm in Turbo Mode

Demand was huge last year, so Dansk Tang has deployed three times as many lines. Four new areas have been approved, and come spring the corner buoys will go up so they can open for all 12 permitted species. The first major push will be the seaweed species dead man's rope — this year grown on full-kilometer ropes instead of micro-batches.

An Underwater Forest Full of Surprises

Seaweed creates life, and you can clearly see it at the facility in Rørvig: Dansk Tang has spotted cod in the seaweed in the Isefjord. It’s been 15–20 years since they’ve been seen like that. Seaweed lines act as mini-habitats where cod, turbot, and small fish hide. If you’re a marine biology student looking for a project to dive into: call Simon. Seriously.

Winter Seaweed Species

The brown species take over now: sugar kelp, finger kelp, bladderwrack. And in about six weeks, the very first new sugar kelp shoots will appear — those ultra-delicate, thin blades many of you go wild for every year.

Christmas Tip

Make your red cabbage happy: toss it with gracilaria. It adds crunch, salty umami, and a little touch of underwater forest to the Christmas table.
