News from Dansk Tang: Flash Brick Weed – a crunchy surprise

Many people are pleasantly surprised the first time they taste seaweed. Curly weed (Chaetomorpha linum) is especially surprising because of its texture.

When you bite into it, the cylindrical cells crackle (see microscope image below), and for a moment you might think there’s sand in your mouth. But there isn’t – that unique crunch is exactly the experience of curly weed (Chaetomorpha linum). The species has been recorded in the Limfjord since 1964. Its flavour is mild – it’s the texture that makes all the difference.
A "wow" moment
Serve it as a small “wow moment” and tell the story. It’s delicious in a simple vinaigrette or marinade, for example with oysters. And if you really want to surprise, drizzle it with warm chocolate as a playful dessert twist.
Another two months
We’ll have curly weed for about two more months. It’s best eaten fresh – not recommended dried, as the crunch disappears.
