Challenges due to winter
At the moment, we are facing challenges due to winter and cold conditions. However, few people think about the fact that cold water is actually beneficial for some seaweed species. One of these is toothed wrack, which, like bladder wrack, is among the most well-known seaweed species in Denmark. It gets its name from the serrated edges that resemble saw blades.
Toothed wrack tastes best when the water is cold – in other words, right now. Its fibre content is high, just like that of bladder wrack – almost 50% – and these two species are also among the most readily available in Denmark. When tasted fresh in winter, toothed wrack has a flavour reminiscent of fresh hazelnuts.
Now's the time
If you try toothed wrack in the summer, it has a very bitter taste. That is why now is the ideal time to “play” with toothed wrack in the kitchen.
Toothed wrack is particularly well suited for pickling, as it does not have air bladders like bladder wrack. More and more people have also started frying the long pieces of toothed wrack, creating a crispy base for a snack or a starter, for example served with fish.
