Turbot’s back in

Now's the time for turbot!
There’s been an especially good run of fish in the 1–2 kg range – classified as size 3. And that size is fantastic for just about everything. Easy to fillet, not too big to cook whole, and typically 15–25% cheaper than their larger cousins. In other words: the perfect balance of size and price.
The turbot fishery is particularly lively right now in the western Baltic, where our friends at Kystfisker Kompagniet operate. Fresh fish hit the deck there daily – and land on the Kaj the very next morning. BAM!
So now is absolutely the time to get turbot on the menu – and keep it there throughout the summer. Just be aware that prices may creep up during the holiday period. Talk to your Fiskerikajen contact, make a plan for your max price – and line up a backup option that makes sense. That way, there’ll be no tight spots in Bredgade and no chaos in Laksegade.
