Top fish of the Christmas season!!!

Cod and cod roe
While we’re all waiting to see what happens with next year’s quotas, let’s not forget to celebrate the wonderful North Sea cod — right now caught by skilled West Jutland gillnetters in a selective, low-impact fishery we absolutely should support.
The cod ladies are already starting to carry roe, which is exactly what we’d expect this time of year. Early in the season it’s small, delicate sacs that come up — and honestly, who doesn’t get a sudden craving for a little poached cod fillet on fried rye bread with mayo?
… mmmmmmmhhh.
Go hard on cod. We guarantee it’s delicious!
Zander
Good grief, they look incredible right now! Thick, juicy, beautiful fish. Mmmmmmnnnhhh. Perfect served raw, grilled, or skin-fried — just like in the good old 2000s. Still a winner!
In season until the lakes freeze over…

Monkfish
Absolutely stunning at the moment — and often caught with low-impact gear. BUT!! Monkfish is hugely popular in southern Europe around Christmas, so prices usually go completely bonkers around December 10th.
If you’ve got monkfish on the menu, now is the time to stock up while the price is still sane!!
Halibut
If you want a fish that holds price and quality through December, go for farmed halibut. We can almost always guarantee supply — especially if you’re not married to the really large ones.
Beautiful fish in the cold months!
Hand-dived scallops
It may come as a surprise, but diving for scallops is seriously hard work. Add winter temperatures and rough weather, and divers spend a lot of days stuck onshore. But when they do get out, they’re pulling up the prettiest scallops we see all year — right now! Which means this is exactly the moment to fill your freezer.
Not only because they taste fantastic, but because in January and February we often see gaps in deliveries. Better to be safe than scrambling.
